If the 8 feet is between the floor and the center of the room, forget it. You're going to need to put in some flooring and some insulation above the ceiling, by the time you're done, you'll have under 8 feet in the very center and significantly less not far from the center.

I assume this is an attic space in which case you will need to find out of the space is liveable not all attics can be made into living space .

Yes, that is correct. The dining are along with the kitchen is 20x20.

In that case beprepared to add a lot to your heating and cooling bill not mnetion the cost of actually doing this for no real practical purpose.

If you insulate the vaulted space properly you will not notice much of an increase in heating and cooling bill. A suspended ceiling fan would also help keep the air where you want it. All home improvements don't have to be practical to be worth it.

Of course, only a structural engineer and architect can tell you on site how feasible this is for your particular structure — I find it really helps to collect a portfolio : gather a number of photos and sketches of similar ceiling vaults/ build build-outs to what you have in mind, to give them an initial ballpark idea of your vision.
