Help with laundry sink

I am doing a laundry are in garage. The washer and dryer is 30 deep hence the pantry will be shimmed out from wall 6 inch to be 30 deep and be flushed with laundry.

The laundry sink is 30 inch cabinet and will hold a 24 inch laundry sink.

I will like to get some help with

1. Is this design practical? The laundry sink cabinet will be 24 inch deep so it will be 6 inch inside than washer and dryer. Will this limit the functionality in real world?

2. Most premade utility sink cabinet (one with cabinet and sink already installed) in market is 19 inch deep. Is there a reason why the cabinet of such sink is 19 inch deep?

3. Any pros or cons of going with undermount or drop in for laundry sink in this area? The drop in will be cheaper to install according to our GC as it will not require quartz person to come in polish the cut edges for undermount sink.

4. We will be installing backsplash on the back of the sink. How should we protect the wood panel on the left side? Can we install backsplash on the panel itself?
