Hey BusyL I just realized I cross posted asking for a recipe. What recipe did you use? I've only made a dill relish which was too watery. Any good recipes or tips to share?

Injust used the brine/syrup for bread and butter pickles from the ball book. Had 5 overgrown cukes, 2 onions and a red bell pepper that i ground in the food processor. Drained for 2 hours, sorry i didnt measure how much veggies just eyeballed it with the liquid. Boiled the brine/syrup for 10 minutes, added the veggies for another 10 minutes, a bwb the jars for 10 minutes. Hope that helps.

I think the reason the relish I made was "watery" is that I didn't salt and drain the cukes that time. Gonna try again and I might even try the dill relish again, that was also good as far as flavor. We'll see how many cuke I end up with. I have a feeling it is going to be a lot more than I anticipated. Only planted seven plants, and two were by mistake, they just showed up . . .

I haven't gotten enough pickling cukes at once to warrant making a batch of whole or speared pickles yet. I may have to make a batch of dill relish (I hate sweet relish!) with what I have now and wait for the cukes to put out enough in one picking to make pickles.
