Hi all. I just bought a half bushel of Red Haven peaches from a local farm market. I need to ripen them for a few days before freezing them (with syrup). I put them on cooling racks covered with paper towels. they are not touching each other. But I was wondering.......I have them stem-down because they don't roll anywhere. Is there any reason why I should put them stem up to ripen more quickly? There are about 70 of them. I know I'm being anal about this, but that's what I do best. :) Thanks!
