Problem with door frames/casings after flooring removal/install! Help!

Moved into new home 3 days prior to February Freeze disaster and have been undergoing repairs. Did not know until tear out that there was a tile floor under a wood floor. Insurance company said both need to be removed. New floor is now installed and every door frame has a substantial gap. Contractor initially said they could shim it and paint over (not ideal) but now tell me that will not work and they can lower the doors/frames to remove the gap. Seems to me there will then be repairs at the top of the door. I've never encountered issues like this before and I am on my 3rd disaster (2 floods and a freeze)! What needs to happen here? Any recommendations or suggestions will be greatly appreciated. Tks

Exactly what the contractor told you.

Remove and reset the trim, doors, & jambs. Yes, there will be repair work to be done at the top of the door opening. Paint at the very least.

It is possible to fill using small trim pieces but it'll end up looking bad. A good contractor would refuse to do that. Your contractor is right, the right way to fix is to pull the trim & doors and rehang and reinstall trim. If the trim has been installed for a while it may be damaged when it is removed, so plan on replacing it.

You don't want to reset the doors, install thresholds at all the doors to fill the void.

Can you replace the 2 short vertical door trims with longer door trims to floor?

I would replace the door frame trim on all the doors. It is only around the doors that looks like there is a problem. I dont mind the gap at all on the bottom of doors. Chances are if the trim is removed and moved down, some will break and have to be replaced anyway, so I would just replace to begin with.

You can add blocking that is taller than your base like the used to do. This won’t help if the jamb is short too.
