Garlic chives are good flowers for a perennial bed. They bloom late in the season (mine are just starting now) and bees & butterflies love them. I confess that although they are in my perennial onion bed, I've yet to try the leaves - I grow them mainly for the bees. Mine are just the generic A. tuberosum, from another collector. They are very hardy, and will gradually divide to form ever-larger clumps if you let them. Be sure to clip off the spent flower stalks before their seed dries, or they can quickly get out of control.

The same goes for A. schoenoprasum chives; be sure to remove the flowers before seed develops.

You can clip common chives any time, once they are established. I give mine a "hair cut" after flowering is done, and they quickly re-sprout. This being the first year with them though, I would recommend only limited harvesting. You want to allow them to store up energy to survive their first winter.

There is probably not a great deal of actual culinary variety but if you have the room you can try different types.

'Nira' is a nice Japanese refined variety type of "Garlic Chives" with broader leaves. "Garlic Chives" tend to be a spreader, can get weedy.

Johnny's has Chive selections they grow for farmers. I planted a 'Dolores', and it has fine leaved thinner tubes. Common chives are a clumper, but are very easy to divide and plant wherever you want.

Bunching Onions or "scallions" are very useful, and many types overwinter.

Leeks are easy to grow transplants, you can eat them whenever you want, thinner in July or let them grow bigger until December. If you leave ones until next Spring they have a nice flower.
