You cannot use quartz as backsplash behind the stove so IMO choose a tile for all the backsplash BTW a free Thermador DW is not what I would want ever. For sure no pattern over the stove in this quite small space FYI quartz is just plastic and I think you could have found many grnites in the same price range but that is just me always choose real over fake.

I love the idea if varying textures vs colors. The cabinet color seems hard to gage as it looks so different in the 2 images you posted? Which one is more accurate? If you do the subway tike. It seems to go best with #4 to my eye. If you do all quartz up the wall I like the simplicity of #1. I like quartz, but don't love the faux veining that much. I am in Seattle as well. Any places you'd recommend to take a look for fixtures, etc? I have explored SODO, but not much downtown.

The cabinets are Ben Moore Simply White… these pics might be better. On fixtures we default to Ferguson’s in Bellevue, they are great. The white tile is actually our Koehler sink.

I'd choose one of the simpler quartz options without too much veining - one of the top 2 in your photo. It's hard to tell from photos, but I would use the one that has more warmth instead of cool gray so it works well with your style of home and darker hardwood floors. I'd use a simple white subway for the back splash. Due to the size of the kitchen, it's best to keep it simple with matching grout and nothing different behind the stove.

I am also looking for a nice white quartz to go with Simply White counters. The complication is that we have a U-shaped counter so have been advised away from counters with directional lines. Any suggestions would be appreciated!

We have Simply White cabinets and Caeserstone London Grey quartz countertops and love it. It is a subtle contrast against the white and looks lovely.
