We are building a custom home and this was suggested for low voltage. Do you think 5 wireless access points are too much? Would you just do two and use a mesh system?

Can't see your drawing, out of focus. But, I would put in several hard-wired Ethernet points and one central WiFi router. You can always add more using one or more of the Ethernet ports.
