IMO if you have prep you need a sink so maybe a better explanation of what exactly you are planning to use this for. IMO if there is stuff to spill you need water to clean it up.

Thanks Patricia, we don't have the option of adding plumbing to this area... so dry bar it is. We will have a fridge to keep drinks cold, and if we have more people over and need ice we will just use an ice bucket. It isn't the best for the planet, but when spills happen I always have Clorox wipes handy.

Im going to suggest 4 ish feet. Like the size of a walkway.
