Your space is 147" long. In option 1, if you have a 60" vanity + 60" tub, that leaves only 25" for the shower. You have 71" in width, and 36" of that needs to be the toilet, so that leaves you just 35". Perhaps you are tiny, but a 2'x3' shower just wouldn't cut it for me. :-)

In option 2, you have similar issues. Your shower would be 51" x 21".

I would recommend you invest a couple bucks in some graph paper, sketch out the outline to scale, then make cut-outs of the various fixtures. Then move them around in the space until you find a few options that work. Something like this:
