Is there a significant difference between pull down kitchen faucets?

We started looking at faucets at Lowe’s and HD. Each of the main brands (Moen, Delta, Kohler) seem to have their own brand name spray technology. Do they mean anything or are they just marketing whizz-bang words? Some have a rocker switch, and others have a rocker switch plus a button, but we have no idea what these do. We’ve never used a pull down sprayer before. Are there specific features we should look for?

One plumber we spoke to suggested Grohe. We’re not opposed to buying online, but prefer to see things, and wonder if there’s really any value with them.

We’ll be replacing a two bowl sink with a new drop-in 33x22 one bowl stainless steel sink, so it’s not like we’re looking for high styling. A simple modern style like the Kohler Simplice Vibrant Stainless is our style, though not necessarily this particular model or brand. It’s just an example of the style we like. (Though Lowe’s does have an all-in-1 package of sink plus faucet that looks enticing, even though we’ll get a plumber to do the work.)
