counter height window in kitchen

We just bought a new house and are redoing our kitchen. I would like to run counters all along this wall but there is this window. It is 35.5” to the top of the bottom trim. If we just got rid of the bottom trim and put new trim on the sides, could we put the counter right up to the window? Thanks!
