With that said, my answer to your questions relies on a few things: Budget, lifestyle, design style and existing structure.
Budget: how many square feet and how much are you budgeting for your project
Lifestyle: do you have kids, indoor dogs, frequently entertain
Design Style: Modern? All 3 floor types can achieve this.
Existing Structure: subfloor, concrete or wood? Are there any existing floors that you plan to keep?

Your bamboo question is complicated. There are good ones(truly environmentally friendly, no vocs, and dense) but there is more junk on the market than quality. Pick the right product and install it properly and you'll be happy but pick the wrong product or hire an installer not experienced with this product and you will not be happy.
