The grain absorbs more stain and is therefore darker. But the variation is consistent (therefore what would be expected from the wood.

Did you see a sample of the stain on your wood that did not have this variation??

The two small uppers next to space for ovens seem to be quite a bit lighter than the others. The sample looked like this:   thanks for the input!

OK, I see the difference in those two doors now. I thought you were worried about the difference in how the grain took the stain.

With it being two doors, it can't hurt to ask them.

It's just the way oak is. That is the beauty of oak.

Yes the doors on top on either side of the cooktop do look lighter.

Standard variation. And standard flat cut red oak. Which ambers as it ages, normally.

This happens to be red oak flooring, but it shows how the color of the wood will vary. When stain is applied, it does not make everything the same, it just makes everything darker.

A good cabinetmaker will separate their wood supply by grain and by color so an entire job would use similar material. Few take the time to do this. It's also common to buy just enough material for a single job, so you use what is delivered.
