It shouldn't be that difficult for a plumber to fish some pex from the sink cabinet up to the top of the cabinets and over to the adjacent wall. A little crown mold to cover and fish down the back wall and you're done. PIA, but doable.

Or a more simple way of doing this is to run the line along with base molding and use wire-mold to hide it simple and fast, this is how they do it all the time in situations like this, especially in NY did a few kitchen remodelings in NYC and Brooklyn.
