Walnut butcherblock countertops

We are having a butcherblock countertop custom made. Now it's time to determine a finish. Ideally, I'd like an undermount sink but I am concerned about the water. Builder would like to use a beeswax finish or Osmo Polyx-oil. I have also seen Real Milk Paints Dark Half oil. I'm concerned that the beeswax will be a little too high maintenance? Thinking that either of the other two would provide a little more water repellant? Any recommendations? :) Thanks! (Also deciding to go "green" or "blue" on the cabinets, if you feel like weighing in on that too!)
