This is the patio roof I want to cover

Is that the plain insulation tiles? What does the manufacturer or the construction company that installed it say can be attached to it? There's fake beadboard tile stuff that's lightweight and meant to attach/stick to ceilings and walls, but I don't know what your insulation tile maker or installer might say about it.

There is a beam down the center. The insulated panels attach there and to the framework on either side to make the gable. The company that installed the roof panels said I can put wood on it but recommended using screws into the insulated panels vs nails. Was curious if anyone has done anything similar, what they used, how they attached.

Nails would never hold, they would be pulling out before you were off the ladder. Without more info I would have serious doubts about the insulation panels being substantial enough to hold any T&G wood product.
