looking for the best privacy plants/trees/hedges

Need some help figuring out what to put along my back fence. I want to block my neighbors house, so a plant that stays green all year round, gets taller than my fence, and doesn’t drop fruit/leaves/nuts/etc. because it will be next to a pool. I’m in zone 9a. Any thoughts on Fern Pines? Bamboo?
