Find a new contractor. Laying down 3/4” ply + flooring with installed cabinets and appliances is problematic. Its done and its wrong you will find out when its time to pull a frig or dishwasher and cabinets or counter tops need to be pulled. Not to mention a water leak won't show up until water has sat long enough for mold and rotten cabinet sides to set in.

A contractor did this to me once. After 10 years I fixed some of it by removing some appliances and building up the subfloor to floor height. But it was 20 years of one pita or another.

Oh I didn’t even think about pulling out appliances?! Maybe they weren’t going to use plywood then? Or maybe they were going to put new flooring under the appliances??

Your new appliances will not fit without the proper clearance. Check for recommended opening before adding the plywood.
