Kitchen and coutners look beautiful! I would do something in a lighter cream color in a pattern (think subway in herringbone) or a maybe soimething simple with more texture/depth to it. I wouldn't do anything much more or it will take away from your coutnertops. While I love marble, it does not match your counters.

For flooring... I do love the one you have, but it is too close a match IMO to the cabinets. I would likely do a tile with a little of the brown/darker coloring in it.

The gold veining in the countertop

A creamy subway, the lightest color in your quartz, would look great! Hard to tell, but concrete porcelain sounds like it would work well.

The area around the sink will have 2 floating shelves to fill in that space

No worries! This hex in either taupe or ivory would look good as well for flooring. If doing a shape like this I would keep backsplash more simple however.
