Likely any countertop fabricator will cut you a round top to your size. However, check the base of the table for the proper support so that the table doesn't tip from the increased size.

There has to be a metal support on the base and some type of wood glued to the base of the tabletop so the top can be properly secured to the base.

Check "restaurant table bases". Most fabricators have scrap pieces of solid surface on-hand from which to make a 60 inch top. You can't beat Corian for durability and ease of resurfacing.

Thank you. No, I will have to get the base made. But you are right, that will all be very expensive. I had checked CB2 but did not like the base too much.
