Kitchen Backsplash Placement

Hi there! I'm in the process of renovating our kitchen and wanted to get some advice regarding backsplash placement. The contractor and I agree that the subway tile backsplash should end under the cabinet. However, I was wondering if I should extend the backsplash to the countertop because it's so close to the sink and we have water splash on the sheetrock and I'm concerned about water damage to the wall?? The bin near the sink is our compost bin, so the area can get a bit messy.

Also, I'm going to add an outlet near the counter on the right (where the baskets are). It'll be used for appliances (tea kettle or crockpot, etc). The area will have 2-3 wood floating shelves. Should I add backsplash to that countertop also? If so, should the height match the rest of the backsplash ending right under the cabinets (there will be a 1-2 inch subway tile under the cabinet so it covers the entire area) or should I just do the full tiles and leave out the 1-2 inch tile on top? Another option the contractor mentioned was tiling that area up the ceiling. We'll be replacing the OTR microwave with a stainless steel hood range (subway tile to the ceiling) and adding cabinetry to the ceiling. The kitchen will be painted white.

Thank you in advance for your thoughts!
