Mango salsa question

I have a friend who would love some mango salsa, but she is allergic to peppers. i was lookiing at this recipe: https://nchfp.uga.edu/how/can_salsa/mango_salsa.html

and thinking i could substitute tomatoes for the peppers. I’m pretty sure tomatoes are more acidic than peppers, so it should be okay, right?

You are just going to sub the 1 1/2 cups of peppers with 1 1/2 cups of tomatoes? It's not been tested and no one can guarantee the safety, but it's a swap that I'd be comfortable with.

Be sure the mangoes are green/unripe, though. Unripe mangoes have a pH of approximately 4.1, quite a bit more acidic than ripe mango, with a pH of closer to 5.9.

Enjoy your salsa, it sounds delicious. I make a peach salsa with a mix of tomatoes and peaches and my family likes it a lot, mango would be just as good, I think. I have a peach tree, though, not a mango tree, LOL.
