96 inches between stove and right wall? use 30 in sink base w 27 in single sink..you have full size dishwasher in a small kitchen. then on wall I'd place a 36 with two 30 in wall cabs . place at 20 in up from counter and just dont pick a super hi arc for faucet. you want those wall cabs in small space ..streamline the look. you can add glass doors to one or more. the storage is key and dont forfeit that. omit a cab in this small kitchen ??? ...no way.......this one is stacked which I dont think you'll do but utilize your wall...

I do like the shelf option above and agree that a full height cabinet could look pretty bulky. Another option could be something like this photo where they chose a cabinet slightly shallower than the surrounding cabinets and smaller. A compromise of an additional cabinet without the heavy feel of same height cabinets in that space.

Oh, and to add to the challenge 7.5ft ceilings! I was going with 30 inch uppers but my contractor is pushing for 36 with no crown.

I agree with your contractor about the 36" cabinets, but I think the shorter cabinet over the sink looks fine. I'd use glass, as herbflavor suggests--if you can keep contents neat and attractive.

I’m afraid the 36” with no crown will look disproportionate to the low ceilings. 30” will be perfect. I like all of the above ideas for something over the sink.

To solve the issue with 7.5' ceilings you should eliminate uppers and gain more accessible storage with drawers. If you like the look, add some open shelves strategically on that side. Great tile to the ceiling will help raise it visually too.
