Spaghetti sauce

Today I made some spaghetti sauce. All of the fresh ingredients (tomatoes, celery, onions and parsley) came from my garden.

    A pantry full of home-canned goods is a beautiful sight. Unfortunately, canning in summer heat is miserable. Kudos to you, Rose!

    I've never canned either. I still hold out hope of one day growing enough tomatoes to put up as sauce 😃

    I made spaghetti sauce today too but only a 3 quart pot. I froze it though as I never learned to can and am too lazy to try.🙂

    I am admiring your Kitchen aid attachment. I used to have a thingy for tomatoes and such but it cracked. Yours looks very different from what I have note.

    I bet it tastes extra special as there is nothing like fresh vegetables in food that you grow, prepare and eat.

    Even with no onion, spices, herbs, etc added to it, the smell of fresh tomato juice cooking down is amazing. It smells like jewels and autumn. Mmmh.

    I noticed ads for bushels of Roma tomatoes in today's food ads from local grocers. They offer a bushel for $33.98; a case (half bushel) is $16.98.

    I also see a lot of excitement over 'hatch chilles' bing in season. What's so special about them?

    Nicole - Every time I've grown celery it was very strongly flavored and even bitter. I decided it was better from the store, the one and only store bought item I've ever said that about.

    Celery can be very tricky to grow well. And so glad you used an approved recipe. So many people don't. A friend of mine who should know better makes up her pepper relish recipe and brings it to parties.

    The flavor. Unique. I associate Hatch chilies as THE flavor of New Mexico. For the very best chile rellenos (forget about using the normal pasty-face poblanos) and green chile sauce. And anything else, of course.

    Great thing is that they come in mild, medium, & hot versions so everyone can enjoy.

    That's great! Especially everything out of your own garden. I've been busy canning potatoes, carrots and green beans but all was bought at the Amish farmers market 🤷‍♀️ Hopefully will be canning deer and elk meat this fall 🤞🏻🤞🏻

    Madly saucing before a trip! I freeze in slabs. Grow my oregano, thyme and buy organic onion and garlic at the organic place nearby (forgot to plant!)
