It probably had some kind of varnish on it and when you sanded it off the bare wood absorbed the oil and darkened but the parts with varnish didn't. I‘ve used danish oil once and the wood stayed darker. Since it penetrates into the wood stripping and sanding will probally both be needed to remove it but how thick is your veneer? Alternately you could sand the rest, oil and the whole thing will be darker.
