Roofing questions

Hello!


Working on building a home in VT. It's a relatively small 20x34 ft timber frame. All framing is done, and I'm looking to get some covering done before snow comes.


Basically, I'm trying to determine best options for roofing. Money-wise this is a "build as you go" situation so I have some budget limitations. There's quite a bit of tongue and groove pine here, so have considered using that as decking over the rafters and then using Zips on top. There's a local builder who has been helping on the project and he's leaned towards that. Seems like doing plywood sheathing and then some kind of tar paper over would probably be quite a bit cheaper, but then (I think) due to insulation requirements I may not be able to keep beams exposed. This is where I'm at now... wondering


1) Any other approaches people might suggest?

2) Short of completing the entire roof, thoughts on what external materials might decently make it through winter?
