I agree, the question is not custom vs not custom but rather cheap work vs quality work. It looks like even though you paid a lot of money, you got cheap work. There is likely very little you can do about that now. Contracts signed, work completed. Anyone who does work like this is probably not going to give you a satisfactory remedy. Now the question is if you had not paid a lot of money, would this bother you and how would you fix it. I'd take a stain marker to the edges where the color is uneven and try to remember that once your emotions pass, you will likely not notice the craftsmanship in your everyday life. I feel for you. I have been in this position so many times myself.
