I think I wouldn't trim that tree; if it were mine. I would hang weight to the branches and pull them down so they're not growing up. I think they say that a 45° angle for the branches is about right. Most of them look small enough to bend. Watch the one at 11 o'clock; it may not want to bend. You can tie the twine to a brick or a heavy washer, depending on the size of the branch/twig. After about 6 months you can remove the tie downs and perhaps move them to new growth.

My trees fruited in the second year, but it had a bigger trunk. You don't want a lot of fruit weight on a small or young tree.

You should keep mulch against the tree so you don't have to mow/weed wack; which usually leads to damage of the tree.
