For an end table that is likely to see wet glasses put down on it a varnish is probably your best choice. From GF, their Enduro-Var II or HP water-based polyurethane will give good results for water-based finishes. I prefer the look of oil-based finishes on cherry myself, the little bit of amber tone brings up the warm colors nicely. For that, the GF Arm-R-Seal is a nice product. Arm-R-Seal will not be as apparent as a film on top of the wood, looking more like an oiled surface but with much of the protective properties of a thicker film finish. If you choose to use it follow the instructions carefully, you can introduce streaks by over-rubbing it at the end.

Note that your cherry will darken significantly over time with light exposure no matter what you finish it with; you cannot keep the freshly sanded look.

I just used oil-based polyurethane on my kitchen table that was made myself from Black Cherry and it came out well. I did not use UV inhibitors because it tends to yellow out the wood from the start, but it is your call.
