I like professional style stainless hoods when paired with professional style ranges, and think that’s a classic look. I think the more contemporary styled stainless hoods are out, for whatever that’s worth. What’s trendiest now are oversized range niches with integrated hoods, which means they’ll be out soon. (They were briefly a fad in the 90/00s in the Tuscan trend, now they’re part of the English farmhouse trend.) That’s followed by plastered hoods. I think wood hoods that are porportionate to and match caninetry is a classic look.

Depends on your point of view. To me, all of those heavy handed plaster hoods, already look dated. Same for the wood hoods. They’re just so overwhelming.

I think the understated appearance of a quality under cabinet hood, will have more legs.

Meant to add…yes, the stainless Wolf hood to match your other Wolf appliances (or any stainless), will have long lasting appeal, and not likely to be dated…like the plaster hoods.

I think both will be fairly timeless, assuming the framed out wood hood is not oversized or overly detailed. If it were me, I would do stainless Wolf.

This forum sees quite a number of posts from people wanting to update their kitchens, but not wanting a full renovation, and often the older cabinet hood surround is a thing they want to be rid of.

Setting aside whether a cabinet surround hood is in or out, from a function point of view, a stainless steel hood will be better because it will not be as challenging as a cabinet hood surround to get the right width and depth. In particular, the cabinet surround hoods tend to be too shallow. A cooktop or range is at least 24" deep front to back, and the "pro" ranges are 28". But cabinet surround hoods are usually only 18-20" front to back, unless the homeowner is knowledgeable enough to insist on deeper, which is an upcharge. You also will have to purchase the hood's liner separately (a liner aka insert is a customizable piece with the hood's motor, lights, and control panel). When you buy a stainless steel hood, most will come all-in-one. Stainless steel is also easier to wipe down than wood, painted wood, or plaster.

The Wolf hood you mentioned is good quality. Their wall hoods are 24" deep front-to-back, or deeper. Look for the style that has a canopy shape, not flat-bottomed.

Make sure your duct that goes from the hood to the outside is large enough. It should be either 8" or 10" diameter.

The Wolf hood will be so much more effective, than what you have now.

Your tiles and cabinet trim are going to look just as or more dated than whatever hood choice you make. I do think the styling and trim on wood and plaster can look dated. If you get a simple metal hood without a lot of fancy trim I think it will be timeless. If you are seeing something all over Instagram, chances are it is a trend being sold by the kitchen industry that wants you to purchase something now that you'll want to rip out and replace in 7 years. It is how they make their money.
