I use the stainless schluter all the time for tile edge but it needs to be installed before tile not like the nosing that is added later . IMO pencil edge is a dated look but a lot depends on your style of kitchen too. I never use white schluter it discolors and honestly if you get the right schluter for the tile it is almose invisible only a tinly little edge

My goal is a traditional or transitional kitchen. Not modern, which is why I thought pencil would be good. But now I’m second guessing that it might look bad.

I would use Schluter. I have white schluter edge & it looks great. It's about 7 years old & looks brand new.

Does the tile you selected come with a matching bar liner instead of a pencil liner? If so, I'd use that instead of Schluter for this tile. Here's what a bar liner looks like installed on this border between the range feature tile and the subway tile:

Thanks all. Will return the pencil and do schluter instead. Unfortunately our tile doesn’t have matching liner or bullnose, just the pencil, chair rail, or wall base trim.
