I am confused I have no idea what the pergola over the pond is there for ? IMO take the prgola down carefully and then do a aptio that has the prgola over some seating are. I do not see the whole yard so can only make some suggestions the biggest issue is if you do concrete a lot od work will need to be done to get it right . Show us the whole space and ideally a to scale plan and info as to what exactly you want to have in this space . Do all of that here in a comments DO NOT start another post

For pavers, look at Belgard. I have used their products for two driveways and been happy with the product.

Do you have children? The hanging rings so close to water is a safety risk.

I would remove the trellis thing hanging on the wall above the pond. It's distracting, as it competes with the pond for your attention, whereas the pond is supposed to be the focal point.

I have grapes growing on it now.

Sadly pergolas and ponds don’t mix. A healthy pond needs sunlight and should be situated away from sources of leaves which will fall into it and rot in the water. It would be best to remove one or the other before starting the stonework.
