Added a pic of the pool view. It is the slope on the right side that we are looking to landscape. We plan to put steps going down and decking through to the newly built retaining wall. Just trying to decide which material we should go with

The primary difference is in the cost of materials (labor may also be slightly higher with a stone wall). Both modular blocks, pored concrete and natural stone are considered to be a "masonry" retaining wall. You should also be aware that a retaining wall over 4' tall (3' in some areas) requires an engineered drawing and a permit.

Those estimates are pretty low regardless of wall type. How long is this wall??

Wall is 12 ft in length and I was told GA slopes 5’ without permits. I can check in to that.

Regardless, are all the options you mentioned equally safe, sturdy and long lasting. We don’t have kids or trees that could damage the wall. Just regular weather elements

If they are well designed and properly constructed, yes.

What segmental block are they proposing? That sounds insanely low - 60 sq ft of face comes out to around $30/SFF, which barely covers materials. Keep in mind that the cheaper blocks aren't actually rated ro anything more than a 24" max garden wall.
