Feeling your pain. They did this to Orange Star for me last year, except they took EVERY stem. I also had a talk with the dog, but it didn’t help (she is old now and has cataracts). I put down Repellex this year, so far so good.

I did a garden tour looking for rabbit damage. I found hostas eaten by deer. They

ate yews in the woodland garden two winters but I've not found damage during the growing season in the main garden. Give me a rabbit any day.

I have rabbits, they never touch the hosta.

i leave a lot of clover and dandelion for them. that is their number one prefered food.

And why do they go after the small struggling hostas instead of the mature plants that I wouldn’t mind allowing them a few leaves?

I’m afraid my Cool As A Cucumber might never get to a decent size.
