Recessed lighting would be my first choice. It will mean more electrical and drywall work than track lighting, however. Recessed is my favorite, because I think it gives the best general lighting, especially if you use a flood lamp - will give you broad beam spread with fewer shadows. Track lighting usually uses smaller bulbs that don't fill in the shadows as well and depending on how small/big your kitchen is, it may not reach as far as you need it to.

Also give yourself some under cabinet lighting. I prefer an uninterrupted fixture instead of the pucks. There are loads of LED options that are even easy to DIY.
