Rose, it looks nice! I've been doing the same with cilantro. I was so looking forward to having my own fresh supply and it kept getting ahead of me and trying to bolt. But I do have a good quantity dried and jarred - and it smells heavenly ;)

Personally, I find dried parsley fairly tasteless. If I can’t have fresh, I would chop and freeze in ice cubes, in preference to drying. That’s what I do with all the soft herbs. I only dry the woody ones.

My experience with drying herbs has been like your's, Floral. I don't really need to freeze very many because where I live most grows year 'round... Parsely and Basil being the exceptions.
