Kitchen Reno Drywall Framing Help

Hi everyone,
We are currently in demolition mode for our kitchen renovation. Our contractor needed to cut back about 12" on an existing wall in order to remove old tile and hardwood below. Turns out the previous owners extended the wall by 12" so we only returned to the original builder specifications. However, the cut back wall is now not in line with the wall that is perpendicular to it.
My question is, should we leave the wall as is or should it be extended back 12" so that both walls meet at the same point?
Leaving it open as is has benefits - it creates more space in the kitchen as the seating side of the island rans parallel to that wall.
Con - will the asymmetry bother me a lot??? And can a space be too open?
What would you do in your home?
