Something very plain so that your counter tops stay in the forefront. I'd select a plain white or gray that works with the gray in the granite. No variation in the tile. You can use a rectangular or square tile, but no special shapes (arabesque, diamond, herringbone, etc.)

I do not think you need a backsplash except for behind the rang so a nice stainless panel back there and just a good quality paint for the walls that meet the counter .

I agree w @Patricia Colwell Consulting about only the stove wall, maybe stainless or the countertop material or a plain tile.

Why was the portion of wall that is to the the right of the stove not removed? The way it meets the counter is unusual.

OP this might be too late for you, but for other people looking at this ... the crown above the cabinets should have been in the same wood color as the cabinets. It would have made the cabinets and ceiling look taller.

Crown matches cabinets underneath, so you don't get a white stripe across the cabinet tops. Room crown is mitered to meet up with cabinet crown.

@s m and @chispa, both were for financial reasons/cost savings. That wall to the right of the stove has a lot of plumbing and other things that would have been very costly and complicated to move (it's a condo with people above and below me). But my contractor planned it to look like the cool luminescent part of the counter goes straight through the wall to the other side. For the molding above the cabinets, the cabinet person was willing to provide for a good deal of money. My contractor is able to build them himself and sees white as a neutral, so he just did it that way. I don't mind since it looks like it goes with the walls/ceiling instead, with the cabinets going to the top. He's actually an excellent contractor who has done great work, but he was working with us to keep the budget from being too crazy. His communication, memory, and amount of time on this entire project on the other hand ...

The counters are beautiful and the kitchen will look amazing when done. Sometimes the unusual is what helps make a space special. I hope you show finished pics.

On second view, I think a charcoal gray tile might look really nice. I'd use grout that matched the tile rather than white.

My floor is a light wood-colored LVP. Color is golden maple.

You're welcome, Beth. Let us know what you are considering. See if you can get a sample board with a large number of tiles. One small tile doesn't give the desired effect.

Also, I know you didn't ask, but the little throw rug doesn't work with your counter tops. JMHO.
