I've never had either, but looking at the photos it appears the first would give you a thick projecting stack of doors to have to move around on just one side of the opening, whereas the second is a more balanced look but will give you a stack of doors on both sides to walk around and consider for furniture placement when they are open.

IMO the big issue is the space needed in the room for those to fold back. So maybe some pics of the space would be helpful and also where do these lead . That might be the factor to be most concerned with . I think I like in the middle best but the space is something that needs to be considered . Why this style of door? They are very difficult to screen with any luck so where you live might be an issue.

We will screen in the porch, to keep the bugs out. Here is the room, the windows and transoms will be replace with a 13 foot door. I’m trying to get 4 more transoms but the contractor gave me a quote for 2 long transoms but I want 4, so try and keep the transoms similar to the original. Thanks for suggestions keep them coming!

Ability to open one side or both for ventilation, doesn't take up as much floor space when open. All one way has a larger impact on floor area.

Not a pro here, but if the doors will "stack" on the outside in either case, it looks like you would have less interference from the Elevate door with the single stack. The photo looks to me like that is a fairly shallow deck, although that might just be perspective. If there are exterior stairs involved or a single access route on one side outside, see if the doors can stack on the opposite side so you don't have to go around them.
