A good finish carpenter or a very handy and meticulous DIY family member could carry out your vision. The brick wouldn't need to be torn out, the wood would cover it. There are lots of blogs and youtube videos with instructions.

If you reduce the width of the fireplace and hearth you'll need the services of a mason or someone who can demo part of your FP and put it back together.

The wood board and batten somewhat traditional detail you posted in your inspiration photo can be milled in a woodworking shop and installed over the brick once your mantel is removed.

As an alternative, you can remove the mantle and simply have a tile guy install large format tile directly over the brick.

Or you can have polished plaster installed over the brick as you see below.

You absolutely need your local fireplace pro with great refrences to take a look at what you've got and tell you what code allows. Do NOT go to a handy relative or DIY unless you never intend to use the fireplace, and if you sell those house declare it a non-working FP.

I did not see those vents there, you definitely can not cover those up.

Of course, one would have to make updates according to the local code but unilaterally stating that it can't be done DIY is incorrect. Note that I used the word "meticulous" in my comment.

Is this a heatilator FP if so those vents cannot be covered and if a wood burning one then no wood surround like the inspo and as for making it narrower IMO not a good plan unless you are changing flooring and do drywall .I like the size of the FP and IMO the mantel is all wrong and does not belong there I like the idea of the large format tile. We have no clue as to your style or even budget and a list of all the things you are planning.

What we might suggest is to contact a mason and have them inspect the fireplace and give you a price on what you want. We would suggest cleaning it and then perhaps look at painting it all white. If that is what you are looking for in an update. Note the fireplace below and the brick painted.
