You will not very successfully turn orange/red oak to a pale white oak magazine shot. Going deeper, a bit browner stain is very classic, or natural with a clear coat will be your best bets.

If you have classic 2 1/4 boards? That won't change, either: )

The decision is a week out of the house, what you want in the long run.

Get a good floor refinisher and the finish will last longer than 7 yrs .

I have 3 1/4" planks. I'm considering a darker color of course. A week out of the house is fair enough if the fumes die down. I'm terribly allergic to fumes. I fell sick when I had epoxy applied in the garage! This was the reason I went with pre finsihed when I bough the house.

It's more than two weeks. It's a full day of empty all the areas including closets. It's the actual work and dry time. It's the move the stuff back in and it's CLEAN before that.Don't believe "dustless refinish" . There will be dust. A lot of it.

Or go room by room,rip, replace and re install. Before that? Try a good buff on what you HAVE and live with the color.

Your allergy determines type of flooring. If, you cannot handle fumes, you are subjected to pre-finished products only.

It's "dust less" not "dust free" sanding.
