Hutch is charming and elegant as is. I would leave the mantle until the room is decorated, or whenever you get a clear idea about it. Some kind of 2d rug would probably look best iin the fireplace space.

I think the fireplace will look a lot better against white walls, so paint and then see how you feel about it.

IMO the red walls and the carpet both need to go. The FP is nice the loveseats too small for the space and honestly are never a good choice for seating. The lace curtains have to go and so do the 2 stands on either side of the art that is hung too high IMO need to also go . A nice buffet there would be a much better choice .Hand the art much lower and really it should be a larger piece on thta wall. Mantel decor is IMO best kept simple but since the pics you show are not relly saying much about your style it is hard to advise. BTW most people do not like to sit on a stool for dining and for sure a bar taable and lace curtains do not work together .The hutch is perfect as it is.

Fisheye lens used, so not that deep/large as it seems. I like that red color. Blinds are going away. Roller blinds coming.

Sorry I disagree with keeping the walls red. This color clashes with the handsome brick. If you like red/ terracotta then bring it into the room with the seating.

If you're leaving the brick, it might be beneficial to paint the walls a white or lighter colore than red. You also might look at removing the carpet and painting the hutch and mantel a white or light color along with any trim.
