Nobody can advise without a photo of the space. A 36 x 72 table in a 9 x 12 room doesn't tell us much.

5000 k is simply a temperature of light, COLD white, You want lumens, ( light output ) and then temperature.

Your best bet is an electrician in your space, and perhaps? Even recessed lighting over the work table. Or standing lamps both sides of the work table.

Something artsy, and adjustable that makes a statement.

I have this center light in my quite large bedroom it lights the whole room for me to clean and still looks pretty good I think. I would not want to go look at any art in a dim lit room so I do not understand the need for a dimmer you can order in 3,4 or 5 K I have LEDs 4000K all hrough my house sothat is what I went with . A fixture with a Fresnel lens may give you some good light. You will want to make sure your bulb has a high CRI (Color Rendering Index) so your colors are seen the way they are supposed to be. As Jan mentioned, lumens refer to the strength of the light. The K or Kelvin is the temperature. Personally, I prefer something around 4,000 for task lighting. It's very neutral. 2,700 is warm and 5,000+ is "daylight" but appears kind of cold in an interior, although you see that temperature in a lot of offices.

I use one like this over my sewing table. It is in a basement with no natural light -- I also have several can lights in the ceiling so it is not at all dark in there. It does a nice job washing the light over the surface without a lot of shadows.

The spend most of my day at work table in the center of the room. I simply want lighting to be a nonissue. The dimmer idea was just to tone that down, relying on alternate sources of light for open studio days. I will look for about a 4000 kelvin then and a high CRI on the bulb. So, you have two requirements, something nice for general looks, and something that enables you to work. Here is a non-elegant solution for the work portion, you may find it useful. I do a fair amount of quilting and my sewing room has only a small overhead light and a small window. Not nearly enough to work. Several months ago DH painted the room a lighter color, which helped a small bit. What really helped was his "temporary" painting light. (Which is now permanently in my room, lol). The "temporary" painting light is just a simple adjustable pole light which we had but with one of those 4-paddle led lights intended for garages and such, screwed in as a bulb. I can point the light paddles in any direction for the current project. I can move the bracket up and down. It is not attractive at all, but does the job wonderfully. It is a work light, though. When someone comes to view a quilt, it goes into the closet.

Why? Pendants are hung over counters where people stand all the time. More than one pendant would help to prevent shadows.
