Trim for midcentury ranch

Hello! I am working with a contractor to remove this 26" load-bearing wall that you see off-center to the left. We are replacing the paneling with drywall. We are keeping the height the same and bringing in both sides about one foot to create more of an "entrance" into the other room. I am wondering if I should finish it with wood trim or only leave drywall. I'd like to keep it somewhat accurate to the era but I'm not a purist. This house was built in 1960 in Texas. Many of the homes in my neighborhood started as someone's lake house - so definitely not a chic midcentury ranch. I appreciate any help offered. Thank you!

Would any of these room transition ideas be appropriate? I'm at a loss.
