Help choosing countertops

I'm in the middle of my first kitchen renovation and having a hard time choosing a countertop. The one I really love is way out of budget, so I'm deciding between two others. I've had a hard time because my floors are a look-alike marble checkerboard tile, so I want to keep the counters simple since I feel like there is already a lot going on between them and the green cabinets.

I found the slabs I like in the showroom and they're called Pearl White and Carrara Marmi. I'm not sure who makes them, but these were the closest I could find online:

1. https://www.msisurfaces.com/quartz-countertops/stellar-white-quartz/

2. https://www.msisurfaces.com/quartz-countertops/fairy-white-quartz/

I'm leaning towards the stellar white since it's simple, but not sure how I feel about the speckles. It's very subtle, but will that clash introducing another pattern into the mix? I feel like the fairy white might have a little too much veining that will compete with the floor, and it also kinda reminds me of varicose veins? But would it make sense to have that gray repeated in the counter a bit?

This isn't the best picture since the sun was going down and the floor is partially covered by cardboard at the moment, but this is what I'm working with right now. I haven't chosen the backsplash yet, but I'm thinking it will just be a white subway tile and the walls will be painted white as well. I'll also be using champagne bronze hardware.
