You should visit your county extension office. This is one of their main reasons for being....to help homeowners select the best plants for that area. They will have listings of the most disease resistant fruit trees well-suited to your growing conditions. Growing fruit organically is certainly possible, especially if you are willing to tolerate less than perfect fruit.

Here in central Va my most productive fruit trees (with no spraying) are pears and Japanese persimmons, and blueberry bushes if you like them. For the most part insect and disease are rare on both pears and persimmons, plus the squirrels, birds and other critters ignore these fruits up until they are very soft and over ripe.

Meanwhile my apples, peaches, cherries, & plums have all sorts of problems even if sprayed. The pitted fruits have many insect and critter attacks while the apples are eaten by squirrels before they are even ripe. I have 2 Bartlett and 1 Kieffer pear trees and as long as a late freeze does not kill the blooms in Spring they have always been extremely productive. Here's a couple of pics of the pears and persimmons this year. I just finished picking the pears and I'm just starting to pick the persimmons now.
