I would remove all the wood. Replace with MCM mantle and large piece of art

I'd be inclined to paint the brick the same color as your walls and make built-in bookshelves on either side. If you don't intend to use it, the brick is a lot to have to look at. Painting it the same color will erase it. I know people go crazy about painting over brick, but there doesn't seem anything particularly vaulable about the mantle.

I agree with jck910. You can do something on the sides depending on what you would use. Don't build shelves unless you're prepared to fill them (not overstuffed) with decor. Matching consoles with art above is another option. If you don't like the brick, you can paint it. Peoples' aversion to painting brick is on exteriors. Just use a product formulated for masonry. White or charcoal are options. Or whitewash, which leaves some of the brick character visible. While most of the below are rooms with higher ceilings, maybe they'll still help you get some ideas.

I’d love to add windows but that may be a bigger job than we can take on right now. I do not want built-ins, or at least tall ones, for the exact reason you said @kandrewspa. These are great inspirations!
