For a commercial bar, my design book recommends an 18-24" deep bar top. You only have about 13" ( = 54 - 25 - 15-5/8 ).

I look at how the lights line up against the cabinetry behind it. Do you have any plans showing that?

Just honor the island - however best to post the exact fixture you are looking at. Height matters too so now is the time to study it from all angles.

You don't have to have pendant lights! Maybe just do 3 recessed lights (4" diam) over the island. Also looks like you have a lot going on visually on that stove wall, so do you need pendants hanging in front of that? When we've had polls on this forum about pendants vs no pendants, the results are usually 50/50.

My opinion only (not a pro) but your island looks beautiful in your kitchen, but having pendants might emphasize that your island is not centered on your perimeter cabinetry and make it look "off". I wonder if you would like a linear light like one of these (examples only):
