I don’t. The very light gray is just an idea; I don’t have the exact paint color picked out yet.

Since you haven't picked out an exact paint color yet, pick out the flooring that you like. Let that drive the paint color selection. It is much easier to find a paint color that works with a floor, than to find a floor that works with a paint color.

Do not do laminate. Do tile.

Laminate around a toilet will have those little crevices at the seams where yuck can go. It's not as bad as carpet, but it's not going to be good. Tile only has grout, and if you get a good brand of grout, it's easily cleaned, without urine penetrating it. Tile has been the choice for baths for generations, for multiple reasons.
